Every city in India has lassi; Jodhpur has makhania — churned so thick with cream and saffron that it is served with a spoon and argued over like politics. The shops around the clock tower have poured it the same way for close to a century, to merchants, wedding parties and now to you. Drink it standing at the counter, too cold, too rich, exactly right.
